Pineapple cakes are a traditional sweet cake in Taiwan, made with slow-cooked rich pineapple filling and buttery short pastry. The pineapple flavour is intense, with the sweetness from the syrup and the natural tanginess from the pineapple. This, wrapped with the short cake pastry, is a match made in heaven!
